I'm usually not a big fan of pumpkin cake, but this is the BEST recipe! It is so moist and actually tastes better the next day!
Mix in bowl:
2 c. sugar
4 eggs
1 c. applesauce
2 c. pumpkin (15 oz. can)
Add dry ingredients:
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
Put in greased 13 x 9 pan. Bake at 350 for 35 minutes. Let cool and then frost.
Frosting:
1 stick margarine
1 tsp. vanilla
2 c. powdered sugar
8 oz. cream cheese
